My first experiment with lemon chicken kabobs

I’ve been craving for kabobs in the last week or so but never had time or energy to try until last night. This was my first time as I mentioned above and it turned out pretty descent. It was quite easy to make as well. Here is my simple recipe

Ingredients:

- 4 Chicken breasts (cube)
- Vegetables: tomatoes, mushroom, zucchini (Other types that would be good to use: onions, bell peppers, etc… pretty much anything you like that would be easy to put on a stick)
- 1 Lemon (use the zest to marinate the chicken)
- 1 tsp of soy sauce
- 2 tbsp olive oil
- Pinch of lemon pepper, black pepper, salt to taste

Step 1: Cut chicken into small cube.

Step 2: Mix chicken, lemon zest, soy sauce, pepper, salt together. Let marinate for 30 mins.

Step 3: Cut vegetables into cube.

Step 4: Mix ½ tbsp olive oil, salt & pepper, and vegetables (cube)

Step 5: Arrange your meat and vegetable (1 meat, 1 vegetable or however you like) on the stick

Step 6: Set oven to broil

Step 7: Brush olive oil on your kabob before sticking them in the oven

Step 8: Let them cook in the oven for 20 mins, then take them out and flip the side and put back in the oven for another 15-20 so they will be brown evenly. Make sure to check them every 10 mins, because it would get burn pretty easily if your oven at a higher temperature.

It wasn’t very hard (30 mins of preparations require the most amount of work after all). Anyhow, I like to eat my lemon chicken kabob with some lemon juice on the meat. So yummy! So here is our dinner last night: jasmine rice, garlic stir-fried spinach and delish lemon chicken kabob. Bonus: it costs me less than $10 for all of this :) Sweet saving delish!
